Happy National Pancake Day! There are a couple of ways to celebrate this holiday today. IHOP is offering a free short stack of buttermilk pancakes per guest and raising funds to support a local charity including Arkansas Children's Hospital. Since 2006, IHOP has raised $13 million for communities across the country.

Continue the celebration with our top five pancake recipes to mark the love for pancakes any day. These are definitely worth waking up for. Enjoy! 

Good Old Fashioned Pancakes

  • 1 ½ cup all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 ¼ cup milk
  • 1 egg
  • 3 tbsp butter, melted 
  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Red Velvet Pancakes

  • 2 cups All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1 cup Powdered Sugar
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 1/2 cups Buttermilk
  • 2 Eggs
  • 1/2 cup Granulated Sugar
  • 3  tbsp Red Food Coloring

1. Sift all dry ingredients except granulated sugar. 

2. Mix eggs, buttermilk, granulated sugar and red food coloring and add dry ingredients to wet ingredients in thirds.  Do not over-mix!

Sweet Cream Cheese Butter:  

  • 1 cup butter, softened (2 sticks)
  • 1 8oz pk Cream Cheese, softened
  • 3 cups Powdered Sugar
  • 1 tsp Pure Vanilla Extract

With an electric mixer, whip butter and cream cheese together for 3-5 minutes until smooth, scraping sides to ensure proper blending.  Add vanilla extract and the powdered sugar, one cup at a time until blended.

S'mores Pancakes

  • 1 cup white wheat flour
  • 8 graham cracker sheets, divided
  • 1 tablespoon baking powder
  • 2 tablespoons cocoa powder
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  1. Preheat the griddle.
  2. In a bowl, combine the flour, graham crackers, baking powder, cocoa powder and sugar.
  3. In another bowl, beat eggs, milk, butter and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour onto the greased griddle pan in 1/4 cup servings.

 

Blueberry Pancakes

  • 2 large eggs
  • 1 1/4 cup milk
  • 2 teaspoons vanilla extract
  • 3 Tablespoons vegetable oil
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 Tablespoons sugar
  • 3/4 cup fresh blueberries
1. Heat a griddle to 350 degrees F or a large frying pan over medium heat.  
2. Spray the griddle with nonstick coking spray.  
3. In a medium sized bowl, beat together eggs, milk and vanilla until foamy.  Stir in vegetable oil.  Add the flour, salt, baking powder and sugar until just combined.
4. Set the batter aside for 5 minutes.  
5. Pour batter onto griddle or pan using a 1/4 cup measuring cup.  
6. Sprinkle a few blueberries on top of each pancake.
7. Cook for about 2 minutes on one side and flip.
8. Cook for 2 more minutes or until golden brown.  
9. Serve warm with syrup or your favorite toppings.
  • Your favorite pancake batter recipe 
  • 2-3 tablespoons Nutella
  • fresh strawberries - sliced
  • pure maple syrup - optional
  • powdered sugar - optional
  1. Mix your pancake batter according to directions. Add Nutella. Whisk to combine.
  2. Spray griddle pan with cooking spray. Place pan over medium - high heat. When pan is hot add 1/4 cup of batter to pan. When bubbles appear around edges flip. Continue cooking on other side. Continue until you have desired amount of pancakes.
  3. Serve with strawberries and any additional garnish you prefer.
