Grilled cheese fanatics have been waiting on pins and needles, anxiously awaiting the opening of The Main Cheese in west Little Rock.

Well, the wait is over. Their doors will officially open at 11 a.m. today (Feb. 25)!

Located at 14524 Cantrell Road, #110, Little Rock, The Main Cheese will serve up a variety of grilled cheese sandwiches from a Farmer's Market sandwich made up of avocado, pepper jack and cheddar cheese, grape tomatoes, baby spinach and arugula on parmesan crusted multi-grain bread to a new spin on the cubano sandwich called the Two Rivers that consists of slow-roasted pork with mojo sauce, shaved ham, Swiss cheese, pickles and peppers, and Cyndi's Gourmet Sauce on a Cuban-style baguette. 

In addition to gourmet cheese sandwiches, there will be a variety of salads, soups (Tomato Dill, Creamy Potato Cheese and Greek Lemon Chicken), appetizers and desserts-- Grilled Cheese Donut, anyone?
