Blueberry Cream Cheese Panini

Ingredients:

  • 8 slices sandwich bread or 4 sandwich rolls, halved
  • 4 ounces cream cheese, softened
  • 1 tablespoon powdered sugar
  • 2 tablespoons butter
  • 1 cup fresh blueberries

Directions:

  1. Heat skilled over medium heat. Mix together cream cheese and powdered sugar.
  2. Melt about 1.5 teaspoons of the butter in the pan, and place a slice of bread in the pan. On the inside of that slice, spread the cream cheese mixture and top with blueberries. Top with second slice of bread.
  3. Cook on one side for 5 minutes or until golden brown, then flip. Cook on the second side for about 3 minutes or until golden brown.
  4. Remove from the pan and repeat with remaining bread. Serve immediately.

Cinnamon Oatmeal Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups quick-cooking oats

Instructions

  1. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda, cinnamon, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats.
  2. Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

Blackberry Graham Cracker Parfait

Ingredients

  • 1 package blackberries
  • 1 package vanilla instant pudding, prepared or a 16-ounce tub of vanilla Greek yogurt
  • cinnamon graham crackers

Instructions

Layer blackberries and pudding, then top with crushed cinnamon graham crackers. Chill for 5-10 minutes and serve.
