- 3 cups cake flour
- 1 teaspoon salt
- 2 tablespoons baking powder
- 3 tablespoons sugar
- 2 cups canned pumpkin puree
- 2 whole eggs
- 3 teaspoons vanilla
- 2 1/2 cups milk
- 1/4 teaspoon pumpkin pie spice
- 1/2 cup heavy cream
- 3 tablespoons maple syrup
- For serving: butter, maple syrup, finely chopped pecans, caramel sauce

Pumpkin Hummus
No need to take a break from pumpkin when that snack-y feeling hits. Whip up this savory pumpkin hummus to crush cravings all season long.
Ingredients:
- 1 can chickpeas drained and rinsed
- 2/3 cup pumpkin puree not pie filling
- 2 tablespoons tahini
- 2 cloves garlic
- 1 lemon juiced (2 tablespoons)
- 1 1/2 tablespoon extra virgin olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon paprika
- water if needed
- To garnish (optional): chopped parsley, sesame seeds, paprika, extra virgin olive oil

Pumpkin Mac n Cheese
Makeover this perennial kids’ fave for fall. Bonus: more pumpkin means less cheese for a healthier finish.
Ingredients:
- 2 cups pureed pumpkin or roasted butternut squash
- 2 teaspoons minced garlic
- 1/2 teaspoon salt, plus more if desired
- 2 tablespoons butter or 2 tablespoons olive oil and a little extra salt if needed
- 1 cup milk of choice
- 1 cup shredded cheese or 3/4 cup nutritional yeast
- Your choice of noodles, grains or veggies: macaroni, quinoa, spaghetti squash, rice, veggies

White Bean Turkey Pumpkin Chili
If you’re trying to create a pumpkin fan, try this one! It’s easy to sneak some of pumpkin’s nutrition into your dinner menu without overwhelming pumpkin flavor.

- cooking spray, I used my Misto
- 2 pounds 99% lean ground turkey
- 1/2 tsp olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon chili powder, to taste
- 2 bay leaves
- 1 1/2 tablespoons cumin
- 1 teaspoon oregano
- 2 15 ounce cans white northern or navy beans, rinsed and drained
- 15 ounce can pumpkin puree, or homemade
- 4.5 ounce canned chopped green chile
- 2 cups low sodium chicken broth, check labels for GF
- kosher salt and pepper to taste
- Optional toppings: chopped cilantro, red onion, chives, Greek yogurt or low-fat sour cream
